FLAVOR: The blue is spicy but balanced by the rich custard creaminess of the paste. Full-bodied, smooth and subtly sweet, with undertones of buttermilk.
KEY POINTS: Made in the village of La Peral by a single producer, who began making the cheese in 1923. Lighter on the palate than some of the more famous blues of the region.
SERVING RECS: Delicious table cheese. Serve with fresh fruits or salad. Pairs beautifully with Tempranillo, Cabernet Sauvignon, Port, and Spanish dessert wines.
