APPEARANCE: A white mold rind envelops this brick-shaped cheese’s compact p paste. As the cheese ripens, a cream line will start to form around the rind.
FLAVOR: Lush and lemony, the cheese balances acidity and richness. The flavor will become more intense and mushroomy with age.
HISTORY: Named for its home region, Leonora® is a prime example of the recent renaissance in Spanish cheesemaking. Though his business has expanded over the past few years, Oscar Fernando Marcos Gonzalez still makes all the cheese himself, with only the help of his assistant, Ana. The recipe for Leonora is loosely based on a traditional cheese from Galicia known as Babia and Laciana. He sources his milk from 2 farms, always from Murciana goats, and helps create the cheese’s signature bright, lemony flavor through the process of lactic fermentation.
